LOU'S HOMEMADE FUDGE 
1 can evaporated milk
4 c. sugar
1 stick butter, softened
1 (12 oz.) pkg semi sweet chocolate chips
1 jar marshmallow cream
1 tsp. vanilla
1 c. pecans

In heavy 4 quart sauce pan stir milk and sugar together. Place over medium heat and add butter. Stir constantly until soft ball stage. Remove from heat and add vanilla. Quickly stir in remaining ingredients, one at a time. Pour into 9 x 13 greased pan. Cool. Cut into squares.

Alice, yes. It will make differently if you use marshmallows because of the process used to coat the marshmallows to maintain shape and keep them from sticking together. Milk chocolate or white chocolate will work, but I'd reduce the sugar level to avoid over sweetening.
