OLD FASHIONED GINGERSNAPS 
2 1/2 c. whole wheat flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 tsp. ground ginger
1/2 tsp. ground cloves
3/4 c. (1 1/2 stick) butter, softened
1 c. firmly packed light brown sugar
1 egg
1/2 c. molasses
Granulated sugar

Mix flour, soda, salt, ginger, cinnamon and cloves on wax paper. Beat butter, sugar, egg and molasses in large bowl until well blended; stir in flour mixture until dough is smooth. Shape dough a level tablespoon at a time into balls with palms of hands. Roll in sugar. Place 2 inches apart on greased cookie sheets. Bake in moderate oven (375 degrees) for 8 minutes until slightly firm to touch. (Cookie will flatten while baking.) Remove to wire racks, cool.
