BAKED LEMON PUDDING 
3 eggs, separated
1/4 tsp. salt
Artificial sweetener equivalent to 1/2 c. sugar
1/3 c. lemon juice
2 tbsp. melted butter
5 tbsp. flour
1 1/2 c. skim milk

Set oven to 350 degrees. Combine egg whites, salt and artificial sweetener; beat until moist firm peaks form. Combine yolks with remaining ingredients; beat until smooth.

Gradually fold egg yolk mixture into whites. Pour into greased 1-quart casserole. Set in a pan of hot water and bake 1 hour. Let casserole cool in pan of water to keep pudding from shrinking.
