PASTA WITH BOLOGNESE SAUCE 
2 lbs. hot Italian sausage
2 lbs. ground beef
1/2 c. butter
1 lg. onion, diced
1 med. green pepper, diced
2 ribs celery, diced
2 (28 oz.) cans Italian plum tomatoes
1 bay leaf
3 tbsp. dried oregano
2 tbsp. dried basil
2 tsp. salt
1 tsp. fresh ground pepper
1 c. dry red wine
2 (6 oz.) cans tomato paste

Cut sausage into 1/2 inch cubes and brown in a heavy skillet over medium heat. Drain and set aside. Brown ground beef in same skillet over medium heat. Drain and set aside. Melt butter in a large saucepan over medium heat. Add onion, green pepper, and celery. Saute about 5 minutes. Stir in sausage, beef, tomatoes, bay leaf, oregano, basil, salt, and pepper. Simmer, covered, at least 40 minutes. Stir in wine and tomato paste; simmer, covered, 15 minutes. Serve over pasta with freshly grated Parmesan cheese. 6 to 8 servings.
