OKRA CROQUETTES 
1 egg
1 tbsp. flour
3 tbsp. cornmeal
1/2 tsp. salt
1/4 tsp. black pepper
2 c. okra, finely chopped
1/2 c. shortening
1/4 c. onion, finely chopped

Beat egg. Add flour, cornmeal, salt and pepper; mix well. Stir in okra and onion. Drop by tablespoons into hot oil. Cook 3 minutes or until brown, turning once and flattening with spatula. Serves 4.
