LOW-CALORIE MOCK FRENCH FRIES 
3 lg. Idaho baking potatoes, scrubbed
2 egg whites, beaten until frothy
Salt to taste
Optional: 1/4 tsp.. cajun seasoning
1 tsp. Parmesan cheese

Cut each potato lengthwise into 8 pieces, then dry with paper towel. Dip the potato slices in the egg whites to coat lightly. Place on a lightly oiled baking sheet, not touching, and sprinkle with salt and seasonings, if desired. Bake in a preheated 425 degree oven 40 minutes, or until golden-crisp and tender. Serve right from the oven.

This was one of my favorites when I was trying to shed that baby weight!
