PEANUT BRITTLE | |
3 c. sugar 1 c. water 1/2 c. white corn syrup 1/4 c. butter 1 lb. raw Spanish peanuts (round, with red skins on) 1 tsp. baking soda 1 tsp. vanilla Boil sugar, water, and corn syrup until it threads. Add butter and peanuts; cook slowly to 300 degrees, stirring occasionally. Add soda and vanilla. (It will foam up). Turn out on buttered baking sheet; pull out thin as it cools. When cold, break into pieces with knife handle. |
