PINEAPPLE YAM PUFF | |
1 (20 oz.) can crushed pineapple in syrup 3 c. cooked mashed yams (about 1 1/4 lbs.) 3 eggs 2/3 c. whipping cream 1/2 c. butter, softened 1/2 c. brown sugar, packed 1 tbsp. fresh grated orange peel 1/2 tsp. mace Drain and discard 1 cup syrup from pineapple. Beat yams with remaining ingredients until smooth. Stir in pineapple. Bake in 375 degree oven for 50 to 60 minutes until puffed and lightly browned. Makes 6 to 8 servings. |
