MINESTRONE SOUP 
1 lg. onion, chopped
2 cloves garlic, minced
2 c. carrots, chopped
2 c. potatoes, cubed
2 c. cabbage, chopped
1 sm. zucchini, sliced
16 oz. stewed tomatoes
2 c. tomato juice
4 c. beef bouillon
16 oz. can kidney beans
16 oz. can white beans
2 tbsp. parsley
1 tbsp. basil
1 tsp. rosemary
3/4 c. macaroni
1/3 c. barley

Combine onion, garlic, carrots, potatoes, zucchini, tomatoes. Cook 10 minutes and add tomato juice, bouillon, beans, and seasonings. Bring to a boil, reduce heat and simmer 30 minutes. Add macaroni and barley. Cook 20 minutes longer.
