POOR MAN'S LOBSTER 
Use haddock fillets, figuring a half pound to a serving. Cover fillets with cold water to which a little vinegar has been added. Bring to boil and boil for 10 minutes, no longer. Drain fish and serve with hot melted butter. The water in which the fish has been cooked could be the basis for a fish stock.
