SCOTTISH SHORTBREAD 
1 c. flour
1/4 c. butter
1/8 c. butter
1/4 c. sugar

Knead butter, butter, sugar and 1/4 of flour into a dough. Sift remainder of flour onto a board and knead gradually into the dough. Roll out and prick with fork. Bake at 350 degrees for approximately 45 minutes until pale, then toast at 250 degrees until slightly darker (check often).
