SCOTTISH SHORTBREAD 
1 lb. unsalted butter
1 c. sugar
3 c. Wondra cake flour
1 c. plain flour

Cream butter. Gradually add sugar and beat on high speed for 10 minutes. Gradually add flour. Press into ungreased pan (11 x 18). Bake for 20 minutes at 350 degrees. Reduce heat to 325 degrees and bake for 40 minutes. Cut into squares while still hot.
