GUAMANIAN CHICKEN 
10 lb. chicken thighs
2 1/2 c. soy sauce
2 c. lime juice, about 15 lg. limes
Rinds of 5 squeezed limes
1 c. catsup
1 c. sugar
1 chopped onion

Mix all ingredients except chicken in a container large enough for 10 pounds. Place chicken in container, cover and marinate for 1-3 days. The longer the chicken marinates the more flavorful it will be.

When ready to cook, drain off marinade and grill or broil. The chicken has best flavor if grilled over a low charcoal fire. Put chicken in a large platter and serve with finadene sauce on the side.
