MEATLESS LASAGNE | |
1/4 c. olive oil 1 lg. onion, chopped 2 cans Italian pack or stewed tomatoes 1/2 tsp. salt 1/2 tsp. pepper 1 tsp. sugar 1 lb. wide noodles, cooked 12 oz. thin sliced Mozzarella cheese 1/2 c. Parmesan cheese Heat oil and onion just until onion begins to brown. Add tomatoes and spices and cook over medium heat for about an hour. Stir frequently. Mixture should not cook down too much, but should thicken slightly. In a 9x13 pan layer noodles, sauce, and cheese, ending with cheese for top layer. Sprinkle with Parmesan cheese. Bake at 375 degrees for 20 minutes or until top is brown and bubbly. |
