BROCCOLI CHEESE CASSEROLE 
2 (10 oz.) pkgs. chopped frozen broccoli
1 can cream of mushroom or cream of celery soup
1 c. mayonnaise
2 c. or 1 tube Ritz crackers, crushed
2 eggs
1 (8 oz.) pkg. shredded Cheddar cheese

Pre-cook broccoli according to package directions. Mix together remaining ingredients.

Using a deep 2 quart casserole dish, layer broccoli then mixture, alternating layers. End up with broccoli as top layer. Bake at 375 degrees for 1/2 hour. Remove from oven. Sprinkle with cheese and return to oven until golden brown.
