PIZZELLE RECIPE - AUTHENTIC
ITALIAN
 
1/2 c. shortening (butter)
2/3 c. sugar
3 eggs
1 3/4 to 2 c. flour
1 tsp. baking powder
1 tsp. vanilla or almond
Pinch of salt

Beat shortening until smooth. Gradually add sugar and beat well. Add eggs and vanilla or almond and beat. Sift flour, baking powder and salt into egg mix. Dough will be sticky soft. For best results, make a soft batter. Pizzelles can be made in advance and will keep indefinitely. May be frozen if desired, without loss of flavor. Makes 3 dozen.
