ZUCCHINI CASSEROLE 
3 c. zucchini, sliced or cut in chunks
1 c. Velveeta cheese
1 can cream of chicken soup
1 pkg. cornbread stuffing
1 stick butter
1/2 c. chopped green onion (optional)

Cook zucchini until tender; drain. Melt butter, add dressing mix, soup, and zucchini; add cheese. Pour in greased dish. Bake at 350 degrees for 15-20 minutes.
