BROCCOLI BALLS 
2 (10 oz.) pkgs. frozen chopped spinach or broccoli
2 c. stuffing mix
1 c. grated Parmesan cheese
6 eggs
3/4 c. softened butter
Salt and pepper to taste

Cook spinach (broccoli) as directed. Drain well. Combine all ingredients and roll into balls the size of walnuts. Freeze on a cookie sheet. When frozen, can be stored in plastic bags in freezer. Place on cookie sheet while still frozen. Bake at 350 degrees for 10 minutes. Yield 65 to 75 balls.
