MINORCAN CHICKEN PILAU | |
1 cooked, boned and diced 3 lb. fat hen 3 c. long grain rice (wash out all starch) 3 c. chicken broth 1/4 lb. bacon, diced 1 med. onion, diced 1 lg. bell pepper, diced 3 tbsp. Worcestershire sauce 1 (16 oz.) bottle of ketchup 1 tbsp. salt Datil pepper, optional In a 4 quart heavy pot fry bacon, onion and bell pepper until bacon is brown. Add all other ingredients to this and mix well. Cook over medium heat until it begins to boil. Stir very gently to keep evenly distributed. When boiling, turn burner to low and cook until half the liquid is gone. Then put the top on tight. (It shouldn't need stirring after this) and continue cooking on low for about an hour or until rice is tender. |
