SALMON OR TUNA LOAF 
1 tbsp. lemon juice
2 c. salmon or tuna, flaked
1 c. med. white sauce (below)
1/2 c. milk
1/2 tsp. salt
1 egg, beaten
1/2 c. chopped celery
1 c. bread crumbs

Add lemon juice to salmon or tuna. Add remaining ingredients and mix well. Bake in a greased loaf pan. Bake at 350 degrees for 1 hour.

WHITE SAUCE:

2 tbsp. butter
2 tbsp. flour
1/8 tsp. salt
1/8 tsp. pepper
1 c. milk

Melt butter in saucepan over low heat. Blend in flour, salt and pepper. Cook over low heat, stirring until mixture is smooth. Remove from heat. Stir in milk. Heat to boiling, boil and stir 1 minute.
