BEEF & VEGETABLE TORTILLA
CASSEROLE
 
1 lb. ground beef
1 med. onion, diced
1 clove garlic, minced
4 1/2 tsp. chili powder
1 (16 oz.) can tomatoes
1 (16 oz.) can corn, drained
1 (15 1/2 oz.) can kidney beans, drained
1 tsp. oregano leaves
1/2 tsp. salt
Tortilla chips, chopped
3 oz. cheese

Brown the beef, onion and garlic. Add chili powder. Cook 1 minute. Mix with remaining ingredients in casserole, top with tortilla chips and cheese. Bake, uncovered 20 minutes at 350 degrees. 485 calories per serving. Serves 6.
