CHICKEN FLORENTINE SUPREME 
2 c. cooked chopped chicken
10 oz. pkg. frozen chopped spinach, thawed & well drained
1 c. (4 oz.) shredded Cheddar
1/3 c. finely chopped onion
1 1/2 c. milk
1 c. cottage or ricotta cheese
1 c. pancake mix
3 eggs
1/4 c. grated Parmesan cheese
1 tsp. salt
1/8 tsp. pepper

1. Lightly grease 11 x 9 inch glass baking dish.

2. Combine chicken, spinach, Cheddar cheese and onion; spoon into prepared dish.

3. Combine milk, cottage or Ricotta cheese, pancake mix, eggs, Parmesan cheese, salt and pepper. Blend in blender, electric mixer or by hand until smooth. Pour over chicken mixture.

4. Bake 45-50 minutes at 350 degrees or until knife inserted in center comes out clean. Let stand 5 minutes before serving.
