MEXICAN HOMINY 
1 (29 oz.) can hominy, drained
2 tbsp. butter
2 tbsp. flour
1 c. milk
1 tsp. salt
1/2 tsp. pepper
1 can cream of celery soup
1 c. grated cheddar cheese
Crushed corn chips

Empty hominy in shallow dish. Make sauce in pan as follows: melt butter, add flour, stirring until smooth. Add milk, salt and pepper. Boil one minute, then add cheese and stir. Add celery soup and mix well. Pour mixture over hominy. Top with chips. Bake 15 minutes at 350 degrees.
