MEXICAN HOMINY 
1 med. onion, chopped
Oil
1 lb. ground beef
1 lg. can hominy
1 can tomato soup
1 can Rotel tomatoes with green chilies
1/2 lb. sharp cheese, grated
1 garlic clove
Salt and pepper to taste

Saute onion in small amount of oil. Saute meat and add hominy, tomato soup, Rotel tomatoes, cheese, garlic, salt and pepper. Cook in 350 degree oven covered for 45 minutes approximately 30 minutes uncovered. Use Parmesan cheese on top.
