BLUEBERRY BREAD PUDDING | |
2 tbsp. unsalted butter 1 loaf French bread 3 c. milk 1 tbsp. vanilla 3/4 c. plus 2 tbsp. sugar 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 pt. blueberries 4 lg. eggs Preheat oven to 350 degrees. Place butter in a 9 x 2-inch square baking dish and place in oven to melt butter. Remove and use a brush to coat sides. Tear bread into 1-inch pieces and place in bowl. Mix the milk and vanilla together; pour over bread. Toss; mix in 3/4 cup sugar, cinnamon, and nutmeg. Soak 10 minutes or until milk has been absorbed. Beat the eggs until frothy and fold into bread. Fold in berries. Spoon into baking dish and sprinkle remaining sugar. Bake 45 minutes until puffed and brown. |
