PEANUT BRITTLE 
2 c. sugar
1 c. light corn syrup
1/2 c. water
1/8 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
1 tbsp. butter
1 (8-10 oz.) pkg. raw peanuts (2 c.)

Cook sugar, syrup and water in large pan. Melt sugar, then cover and cook for 3 minutes. Remove cover and cook to a soft ball. Add peanuts and cook to a hard crack, stirring constantly because the peanuts stick and burn easily.

Remove from heat and add remaining ingredients. Stir well and pour out onto buttered cookie sheet. Let cool then crack.
