APPLE JACK PORK 
3 (3 oz.) pork loin slices
1 lg. red apple, cored, peeled, and sliced 1 oz. apple brandy
2 oz. pork broth
1 scallion, chopped
10 whole fresh cranberries
1/2 tsp. cornstarch
1 oz. butter
Salt, pepper, and garlic (crushed)

Heat a skillet with butter and cook pork slices until golden brown on both sides. Add sliced apple, and season to your liking with salt, pepper and garlic. Add the apple brandy and scallions. Add the pork broth and bring to a boil. Reduce liquid by half.

Mix cornstarch with a little water and add to thicken the sauce. When sauce is desired thickness, arrange pork slices on plate and arrange the sliced apple on top. Pour the sauce over top, garnish with cranberries and serve. Serves: 1. (Prep and Cooking Time: 30 minutes)
