APPLE-CELERY SALAD 
1 tbsp. grated orange peel (optional)
1/4 c. orange juice
1/2 c. mayonnaise
1 tbsp. sugar
1/2 tsp. dry mustard
1/8 tsp. hot pepper sauce
1/8 tsp. salt
2 med. (3/4 lb.) red apples, quartered, cored, then sliced thin lengthwise
1 c. diagonally sliced celery
Greens

In bowl, mix well orange peel and juice, mayonnaise, sugar, mustard, pepper sauce and salt. Fold in apples and celery. Serve on greens. Makes 4 servings.
