ZUCCHINI PINEAPPLE BREAD 
3 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
3/4 tsp. nutmeg
3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
2 c. coarsely shredded zucchini
1 (8 oz.) can crushed pineapple (well drained)

Beat eggs then add oil, sugar and vanilla. Beat until foamy. Stir in zucchini and crushed pineapple.

Combine dry ingredients and add to zucchini mixture. Stirring gently just to blend. When blended add 1 cup chopped nuts and 1 cup raisins.

Bake in 2 greased loaf pans for 45 to 55 minutes at 350 degrees. When removed from oven let cool in pans for 10 minutes before removal.
