BUTTERSCOTCH BARS 
1 c. butter, softened
1/2 c. sugar
1/2 c. brown sugar
2 egg yolks
1 tsp. vanilla
1 1/4 c. quick cook oats
1 c. finely chopped nuts, divided
1/2 c. coconut
1 (12 oz.) pkg. butterscotch bits

Preheat oven to 350 degrees. Combine butter, sugars, and beat until creamy. Add egg yolks and vanilla, beat well. Blend in flour. Stir in oats, 1/2 cup nuts and the coconut. Spread into greased 15 1/2 x 10 1/2 x 1 inch pan.

Bake at 350 degrees for 20 minutes. Cool slightly. Melt butterscotch bits over hot, not boiling water. Spread evenly over cookie layer. Sprinkle with remaining nuts. Cool until firm. Cut into 2 x 1 inch bars. Makes approximately 75 bars.
