SWEET POTATO SCALLOP 
6 med. sweet potatoes, cooked & sliced
4 med. apples, pared, cored & sliced
1/3 c. brown sugar
3 tbsp. melted butter
1/4 c. water
Marshmallows, as desired

Mix butter and sugar. In greased 2 quart casserole, alternate layers of potato, apple and sugar mixture. Pour 1/4 cup water over all; cover and bake at 350 degrees for 40 minutes. Top with marshmallows and continue baking for 20 minutes. When first marshmallows have melted, top again with more marshmallows.

This is more moist than regular candied yams. A can of crushed pineapple can be added, if desired.
