2 1/2 lbs. yellow squash 1 red onion, chopped 1 c. sour cream 1 can cream of chicken soup 1/2 stick butter Salt and pepper to taste 1/2 pkg. cornbread stuffing or rice Boil together squash and onion until squash is tender, drain, and mash. Add rest of ingredients. Pour into greased baking dish. Bake at 350 degrees for 45 minutes. Add bread crumbs and cheese to top. |
