MICROWAVE PEANUT BRITTLE 
1/2 c. light corn syrup
1 c. granulated sugar
1 c. dry roasted peanuts
1/2 tsp. salt
1 tsp. butter
1 tsp. vanilla extract
1 1/2 tsp. baking soda

In a 2 quart microwave proof dish, combine corn syrup and sugar. Microwave on high 4 minutes. Stir in peanuts. Microwave on high 3 to 5 minutes (depending on microwave), until light golden brown. Stir in salt, butter and vanilla. Microwave on high 1 minute. Stir in baking soda until mixture foams. Quickly pour onto an oiled baking sheet. Cool and break into pieces. Store in airtight container. Yield: approximately 3 cups of candy.

Since microwave ovens vary in power, you may need to adjust your cooking time.
