CHICKEN WINGS IN MASTER SOY SAUCE | |
3 lbs. chicken wings MASTER SOY SAUCE: 1 slice ginger root 1 scallion, cut into 1 inch lengths 1 tsp. peppercorns 1 star anise seed 1 c. light soy sauce 1 tsp. thick soy sauce 1 tbsp. mushroom soy sauce 1 tbsp. sugar 2 tbsp. Chinese cooking wine 1/4 c. water 1 tsp. sesame oil 1. Divide each chicken wing into 3 parts - discard tip. 2. Put first 4 ingredients in master soy sauce in apiece of cheesecloth. Gather at top and tie with string. 3. Put master soy sauce ingredients in pot. Bring to a boil - turn heat to low and simmer 5 minutes. 4. Turn heat to medium high. Add washed chicken parts to sauce. Cover and let them simmer, stirring occasionally. Add a little water if sauce cooks down too much. 5. Cook for 15-20 minutes or until tender. |
