APPLESAUCE BRAN MUFFINS 
1 1/4 c. flour
3 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 c. whole bran cereal
1 lg. egg
1/3 c. milk
2/3 c. sweetened applesauce
1/4 c. butter, melted

In medium bowl, stir together flour, baking powder, salt, sugar, and bran. In small bowl beat egg until foamy. Add milk, applesauce, and butter and beat to blend. Add flour mixture, stir only until dry ingredients are moistened. Turn into buttered muffin pan cups, filling them 2/3 full. Bake in preheated oven 400 degrees about 20 minutes. Best served hot fresh form oven with butter. Makes 12.
