IRISH POTATO SOUP | |
7 c. water 6 med. potatoes, peeled, sliced 2 med. onions, peeled, sliced 1/2 tsp. thyme 1 bay leaf (optional) 1 clove 1/2 c. milk, scalded 1/2 c. cream, scalded 1 1/2 tsp. salt 1/2 tsp. pepper Bring water to a boil, add potatoes, onions, thyme, bay leaf (optional) over low heat for about 45 minutes. Force the mixture through a sieve, add milk, cream, salt, pepper. Cook on low heat 10 minutes longer. Serve hot. Very good. Serves 8-10. |
