MINIATURE CHEESECAKES 
1 (8 oz.) pkg. cream cheese, room temperature
1 lg. egg
1/2 c. sugar
1/2 tsp. almond extract
3 tbsp. vanilla wafer crumbs
3 tbsp. cherry or strawberry jam or canned strawberry

Preheat oven to 375 degrees. In large bowl mix cream cheese, egg, sugar, almond flavoring. Beat until light and fluffy. Line a 12 cup miniature muffin pan with paper baking cups. Place 1 teaspoon vanilla wafer crumbs in bottom of each cup. Press down with back of small spoon or fingertips. Fill cups with cream cheese mixture. Top each with 1 teaspoon of jam. Bake in preheated oven for 10 minutes. Let cool in pan on rack to room temperature. 8 to 10 minutes to make 12 mini cheesecakes.
