ORANGE WALNUT CHICKEN | |
3 tsp. salt 8 chicken breasts 4 tsp. orange peel, grated 2 c. pineapple tidbits, with juice 1/2 tsp. cinnamon 4 oranges, peeled, sliced 1/4 c. water 2 tbsp. curry powder 2/3 c. butter, melted 1 1/2 c. orange juice 2/3 c. walnuts 1 c. raisins 1/4 tsp. allspice 2 tbsp. flour 2 tsp. soy sauce Preheat oven to 400 F. Mix salt and curry powder and rub into chicken. Dip seasoned chicken into butter and place skin side down, in shallow, uncovered baking pan. Bake 10 minutes, turn, and bake 10 minutes longer. While chicken is baking, combine orange peel, orange juice, pineapple, walnuts, raisins, cinnamon and allspice in a saucepan. Bring to a boil. Reduce oven temperature to 375 F. Pour boiling mixture over chicken and bake 30 minutes longer. Arrange the chicken in a serving dish, garnish with orange slices and keep warm. Combine the flour, water and soy sauce and stir into the pan juices. Bring to a boil, stirring and cook 2 minutes longer. Pour over the garnished chicken. Does not freeze. Serves 8. |
