CHICKEN KAPAMA 
1 frying chicken, cut up
Flour for coating
1 stick butter
4-6 pieces orange peel
3 tbsp. lemon juice
1 lg. can tomatoes
2 cans Hunt's tomato sauce
1/2 tsp. salt
1/2 tsp. sweet basil
1/2 tsp. oregano
Salt and pepper to taste
1 stick cinnamon
1/2 lb. grated cheese, Italian

Coat pieces of chicken in flour and fry in butter over medium flame. Do not let butter scorch. Remove chicken from pan and strain the drippings. Place chicken pieces in cooking pot and add all the remaining ingredients, including the butter drippings which were strained. Do not add grated cheese. Cook over low heat for about 2 hours, stirring occasionally. Cook macaroni or spaghetti as per directions on package. Strain, then place layers of macaroni or spaghetti on a large platter, alternately with sauce and cheese. Serve chicken on a separate platter.
