CHICKEN RUBY 
2 1/2 to 3 lb. chicken, cut into pieces
1/3 c. flour
Salt
Pepper
4 tbsp. butter
1 1/2 c. fresh cranberries
3/4 c. sugar
1/4 c. onion, chopped
1 tbsp. orange peel, grated
3/4 c. orange juice
1/4 tsp. cinnamon or ginger

Season and coat chicken with flour. Brown in butter. Bring remaining ingredients to a boil. Boil 3 minutes and pour over chicken. Bake 35 to 40 minutes at 325 degrees.
