CARMEN'S EGG STRATA 
8 slices bacon, fried crisp and crumbled
6 tbsp. butter
1/2 c. dried bread crumbs
2 c. soft bread crumbs
3/4 c. milk
8 eggs, beaten
1/2 lb. sliced Swiss cheese
Salt and pepper to taste

Melt 2 tablespoons butter in skillet. Add dried bread crumbs and crumbled bacon. Set aside.

Soak soft bread crumbs in milk, drain and reserve milk for eggs. Set aside.

Combine milk with eggs, add salt and pepper.

Melt 4 tablespoons butter in a skillet. Cook egg mixture until soft, but not fully cooked. Add soaked bread crumbs and mix together.

Put in a buttered 9 inch square pan. Put cheese on top then sprinkle with bacon mixture. Bake 425, 15-20 minutes. May prepare the day before, then bake before serving.
