CARROT CAKE 
2 c. sugar
1 1/2 c. Wesson oil
4 unbeaten eggs
2 1/2 c. flour
2 tsp. cinnamon
1 1/2 tsp. baking soda
1/2 tsp. salt
3 c. grated carrots

Combine sugar, oil and eggs; blend well. Sift together flour, cinnamon, soda and salt; mix well with first mixture. Then add grated carrots and stir well. Bake in 3 layer cake pans for layered cake at 350 degrees for 30 minutes. This can also be baked in a bundt cake pan.

ICING:

1 box powdered sugar
8 oz. Philadelphia cream cheese
3 tbsp. milk
1 tsp. vanilla
1 can Angel Flake coconut
1 c. finely cut pecans

Cream together sugar and cream cheese. Add remaining ingredients and beat well.
