CORN STICKS 
1/2 c. yellow cornmeal
1/2 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1 tbsp. sugar
1 egg, beaten
1/2 c. evaporated skimmed milk
2 tbsp. vegetable oil
Vegetable cooking spray

Combine first 5 ingredients in a medium bowl. Add egg, milk, and oil; stir until batter is smooth. Coat a cast iron corn stick pan with cooking spray. Heat in a 425 degree oven 3 minutes or until hot. Remove pan from oven; spoon batter into pan, filling two thirds full. Bake at 425 degrees for 10 to 12 minutes or until lightly browned. Yield: 12 corn sticks (81 calories per corn stick).
