PARMESAN BREAD STICKS 
1 pkg. dry yeast
2-2 1/2 c. flour
2/3 c. warm water
2 tsp. sugar
3/4 tsp. salt
1/4 c. vegetable oil
1 egg white
1 tbsp. water
2 tbsp. grated Parmesan cheese

Dissolve yeast in 2/3 cup warm water in a large mixing bowl. Stir in 1 cup flour, the sugar, salt and oil. Beat until smooth. Stir in enough remaining flour to make a soft dough. Turn dough out onto a floured surface and knead about 5 minutes until smooth and elastic.

Divide dough into 30 equal pieces. Roll each piece into a strip about 6 inches long. Place strips 1 inch apart on greased baking sheets. Cover and let rise in warm place 30 minutes or until doubled in bulk.

Beat egg white and 1 tablespoon water until frothy. Lightly brush egg white mixture over bread sticks and sprinkle with Parmesan cheese. Bake at 350 degrees for 20 minutes or until golden brown. Makes 2 1/2 dozen bread sticks.
