CREAM PUFFS 
1 c. water
1/4 lb. butter
1 tbsp. sugar (regular)
1/2 tsp. salt
2 tsp. baking powder
1 c. sifted flour

Sift flour and baking powder. Measure 1 cup and set aside. Boil water, butter, sugar and salt. Bring to rolling boil. Add flour to above ingredients and beat until mixture forms a ball on low flame.

Remove from heat. Add 4 eggs, 1 at a time. Beat after each addition, until smooth. Preheat oven to 450 degrees, lower to 400 degrees. Slightly grease baking pan and spoon. Drop by teaspoonfuls onto pan. Bake until puffs are golden brown and risen. (If they don't rise, reduce temperature.)

FILLING:

1 1/2 c. ricotta cheese
1 sm. bottle maraschino cherries
1 sm. bag tiny chocolate chips
Sm. amount powdered sugar
Vanilla

Add powdered sugar and vanilla to ricotta cheese according to taste. Drain cherries. Add to ricotta plus chocolate chips. Whip with wire whisk or beater until smooth. Slice puffs in half. Stuff with filling right before serving.
