BAKED BEANS | |
2 lbs. Great Northern beans 1 lb. bacon, cut up 1 lg. onion, chopped 1 lb. dark brown sugar 1 lg. or 2 sm. Brooks tangy ketchup 1 tsp. dry mustard (optional) Parboil beans with 1/2 teaspoon baking soda 1/2 hour; drain. Add fresh water to cover and bring to boiling. Add onion and cut up bacon. Simmer until beans are tender but not soft. Remove from heat; add sugar and ketchup; mix thoroughly. Bake in baking pan about 10 x 16 inches 2 1/2 to 3 hours at 350 degrees. Note: These are Dolly's famous and loved baked beans, never a bean left in the pan. |
