PUMPKIN WHOOPIE PIES | |
2 c. pumpkin 2 eggs, separated 2 c. brown sugar 1 c. oil 3 c. flour 1 tsp. each cloves, cinnamon, ginger, salt, baking powder, baking soda & vanilla FILLING: 1 lb. 10x sugar 2 egg whites 2 tsp. vanilla 4 tbsp. flour 2 tbsp. milk 1 1/2 c. shortening Mix together flour, cloves, cinnamon, ginger, salt, baking powder and baking soda. Set aside. Beat together pumpkin, 2 egg yolks, brown sugar, oil and vanilla. Gradually add dry ingredients. Beat well after each addition. Drop by teaspoonfuls onto baking sheet. Bake at 350 degrees for 12 to 15 minutes. Let cool. To prepare filling: Beat 2 egg whites until stiff. Add vanilla, flour and milk, beat well. Add shortening and 10x sugar. The more you beat it, the fluffier it gets! Spread between 2 cookies. |
