EAST TEXAS RED BEAN GUMBO 
1 lb. pinto beans, cooked tender
1 lb. skinless sausage, cut into small strips
2 onions, chopped
2 cans Rotel tomatoes or (sub with picante)
1 chopped bell pepper
1/2 c. oil
1/2 c. flour

Put beans in processor and blend thoroughly. Add Rotel tomatoes and blend again.

In heavy saucepan make a medium thick sauce with oil and flour. Add onions and cook until tender. Add bell pepper and sausage. When sausage is browned add beans and tomatoes. Simmer for 30 to 40 minutes on low heat. Add water if needed.
