CHILI CORN PONE PIE 
Approximately 1 1/2 lbs. ground beef
Med. size onion, chopped
1 pkg. chili mix
1 can kidney beans
1 1/2 c. tomato juice
Salt and pepper to taste
Cornbread muffin batter

Brown meat in small amount water, then drain to remove grease. Add chopped onion and cook until tender. Stir in seasonings, chili mix, 1 1/2 cups tomato juice, and kidney beans. Cover skillet and simmer over low heat for 15 minutes, stirring occasionally. Prepare cornbread batter and preheat oven to 425 degrees. Spray 9 x 13 inch pan with vegetable spray (or grease pan lightly), pour meat mixture into casserole and top with cornbread batter. Bake at 425 degrees for 20 minutes. Serves 6.
