SAUSAGE JAMBALAYA 
1 lb. smoked sausage
1 chopped onion
1 bell pepper
2 1/4 c. uncooked rice
3 c. chicken broth
1 can tomatoes, chopped
1/4 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. black pepper
1 bay leaf

Cook sausage until brown. Add onion and bell peppers and cook until tender. Stir in rice, chicken broth, tomatoes, and seasoning. Bring to a boil on stove in large casserole dish. Cover and bake at 350 degrees for 30 minutes or until rice is cooked. Fluff lightly with a fork and remove bay leaf.

(Broth may be substituted with water and chicken base.)
